Apricot tarts and marmalade joined creme caramel before coconut husk veered us towards fine oak. The first sip was intense, an explosive kick of scotch bonnet chillies, cinnamon stick and pickled ginger after which appeared spiced apple chutney, orange liqueur and fresh coconut.
